Mornings Matter

In a distant planet, many moons ago, there lived a man called Malyfe. Malyfe wanted a great many things and so he prayed continuously around the sun to the Supreme Power of the Universe (SPU).

Moved with compassion, SPU decided to consider Malyfe’s desires. His first one was LOVE which SPU was happy to grant. The second, JOY, also seemed reasonable to SPU. Malyfe persisted and asked for Peace and this was granted too.

“When can I get these”, Malyfe asked in disbelief of his good fortune.

“You will receive the first part of these before the sun rises, in the quiet of your conscious mind”, replied SPU.

“Oh! But I want them whole!”, an angry Malyfe retorted. 

“You can have them whole My dear child Malyfe…but, only when you give what you receive away…”

The circadian rhythm of the human body is controlled by light exposure. (For further reading, if interested: https://www.nigms.nih.gov/education/pages/Factsheet_CircadianRhythms.aspx)

This makes sunrise a very complex time for the mind and body in the twilight of sleep and wakefulness. Humans have understood this for centuries as evidenced by religious practices through the ages.

For me, it is indeed the pivotal point that decides how I will handle what challenges are thrown at me through the day.  Awakening the mind with meditation and body with exercise (and coffee!) keeps me in what I call my energy equilibrium. (I even have to have a “power” meditation in the day to reset this equilibrium if there are too many highs or lows.)

Now, I am ready to tackle the day, and first on the list was Denver scrambled eggs for Dyli’s Birthday Breakfast.

This comes together quickly if you already have your mushrooms and bacon done the night before. (Recipe in previous post.) Break up the bacon into large pieces and add to the mushrooms in the skillet and turn the heat to medium.

Chop the green onions and add to the skillet. There should be enough fat in the pan that you don’t need to add any more butter for this dish.

 

Cook that for 1 minute and then add the eggs.

Cook this slowly, scrapping the bottom carefully so as not to break the large soft curds as they form and never letting it brown.

 

Take your time with this most important step to enjoy some soft Denver scrambled eggs.

 

Quick Denver Scrambled Eggs

 Serves: 4

Ingredients                            

4 oz button mushrooms sliced, seasoned and  sautéed in butter (Recipe in previous post)

6 slices of cooked bacon broken into large pieces

2 stems of green onion, green and white portions chopped (3/4 cup)

8 Eggs

Method

1. Use the previously sautéed Mushrooms or make a new batch in a skillet.

2. Add the bacon pieces to the skillet and turn the heat to medium.

3. Add the green onion and cook for 1 minute.

4. Add the eggs and cook slowly scrapping the bottom carefully so as not to break the large curds as they form and never letting it brown. Do not overcook. Serve immediately.

Vegetarian variation: Bell pepper and/or serrano pepper instead of bacon. Topped with shredded cheese at the end and served with a side of sliced avocado.
